First Butt in the MES 40

Followed Bears step by step, and it really is. My time and temps matched his within 5 minutes.

BTW, yes, I remembered to put the bottom drip tray back in.

Trying to decide if I'm ready to attempt a brisket or not. Pretty big cut of meat to mess up. Worried I don't have getting the flavor into the meat down enough yet. The Butt had a real nice flavor to it using the Smoking Rub from Weber. The loin I did, the Walmart apple pie filing was bland once the loin was done.
