  • Combine and whisk all ingredients until smooth.
  • Let the batter rest for 30 minutes (or sit in fridge overnight).
  • Heat non-stick or lightly greased pan to medium.
  • Pour in a thin layer of the batter just so it covers the bottom.
  • Once it is golden brown on one side, flip and cook the other.
  • Serve with maple syrup, butter, fruit, or jam.

Those pancakes were pretty famous around our parts. Many reveiws and news stories about the restaurant that made them famous. It was called the Hoito (finnlandia culb). Unfortunately it burnt to the ground 4 or 5 years ago. Used to go there a lot of Sunday mornings for breakfast. The pancakes were one of my favs. It had a scale at the entrence, you weighed your self going in and going out. I always weighed a pound or to more on the way out. lol

  • 1⁄2teaspoon salt
  • 2eggs
  • 2tablespoons sugar
  • 2tablespoons melted butter
  • 2cups milk
  • 1cup flour
