It's all about grilling and creating for me and all about simplicity for her, we try and compromise. This was originally planned as a 2 night escape to the lake but plans change and we had to cut it a day short.
I confess, I failed to get any great pics of the food but I grilled two thin ribeye, sliced those up and put a foil pack of bell peppers and onion on the grill with a little beer.
I have a mini kettle knock-off that lives in the camper. More about that and compromise later.
we stuffed the ribeye, veggies and 4 slices of provolone in to two buns, wrapped those in foil and back on the grill to get melty. Coals were pretty low by now.

They hit the spot with some jalapeno kettle chips.
Next morning was bacon, eggs, and toasted bagels.
Technically a food pic... that's what I'm working with, a pretty nice stove as far as Coleman goes. Delish, scrambled the eggs in all the bacon grease of course!
Now for that grill and compromise....
Mrs philpom had also wanted a fire pit to travel with us and she likes the idea of standardizing every camper related around propane. Ok, I understand perfectly, started shopping and wouldn't you know it! I found a flat fold (2" thick) propane grill that's got twice the cooking space as the mini kettle thing but also works with charcoal or wood and has a fire pit mode. Bingo! Only downside, no lid. Maybe I'll keep the mini kettle lid. I don't have it yet but once it arrives I'm certain to share. It will free up a ton of storage and provide tons of versatility over the mini.
Time to hit the camping trail y'all.
