The wife got me a MES 30 for Christmas and after reading about 50 threads here on brisket I got a 3.5 pound flat from Costco going today. For me brisket, prime rib, and jerky are the big 3. Looks like all the information I will ever need is right here in one convenient place. Looking forward to many smoked meals in my future and thank you in advance for all the help you will be providing along the way.

That brisket smoked for 9 hours yesterday then 2 more hours today before it was done, didn't expect an 11 hour cook time for such a small piece. Sure was good though! Started an 8.5 pound flat today, should make for a nice New Years Eve dinner.
