I can tell you how the pellets have worked for us, we started with the "chunk" wood and did not like it because the pieces were to big. We tried the pellets and liked them the first time. The smoke flavor is just great. And with the pellets, it is easy to mix and match for lack of a better...
YES ! we use wood pellets for a very good reason, first the wood chunks are to big and they can touch the heating elements and can short it to ground, and we like to MIX the wood pellets, and you can not do that with wood chips

What you are calling a temp control switch is really just a safety, if the smoker gets over what ever the temp that switch is set for, it " opens" and will turn the smoker off, that smoker will work without that. In a pinch you could just put the two wires together. In the refrigeration game...
It does not " check" for " moisture" it checks for current flow balance . A GFI monitors the current flow from the hot to the neutral and hot to ground, any time there is an imbalance it will trip and turn the current off. It can sense a mis match as small as 4 milliamps.

I would not call them "flavor" pellets, they are from trees, apple trees, oak trees, hickory, cherry and so on, yes we use them in our Masterbuilt smoker and like them much better than wood chips.
