    Hi - I'm new here. I live in Louisville Kentucky and am currently cooking on a New Braunfels Hondo Classic. Which is my first smoker. I'm a fan of Texas and Southern Tennessee BBQ. I've smoked a few butts, chickens and ribs. Planning on giving pork belly (bacon!!) and brisket a try this summer!
