    Yeah once I thought about it I realized the top exhaust only regulates flow and not temps so I just opened it all the way and only started messing with the intake.

    Thanks for the reply guys. I finally just closed everything on it until the temp dropped and and then opened the ball valve back up a tiny bit at a time until I got it where I wanted it. I think my issue was that I got it too hot to begin with so it just stayed hot. I lit about half my chimney...

    Built me a UDS and well I cannot keep it below 255. I have the ball valve BARELY open, I mean like an 1/8th inch gap. I also have the exhaust in my Weber grill top almost all the way closed. If I do anymore than what I have now I won't have any flow. Luckily I'm not actually smoking anything...

    I'm smoking a 5 pound butt and havent had any issues at all until I noticed the temp of the butt dropping from 194 to 192. Any idea why it's going down? And before you all comment on how I should have pulled it at 190 or so, I always smoke mine to 203 before I pull it, just a personal...

    I honestly think it's just the outside temp that's giving me the issue. It's chilly and rainy out so its just hard to keep heat even when blocked from the wind. I'm sticking at around 220 now so I guess I'll just let it smoke and see where I get.

    I dumped the water and blocked everything from the wind and my temp spiked to 230 not it went back down and is fluctuating between 210 and 220. I'll just let it keep going and pull it later and finish it in the oven if need be.

    Yeah I blocked the wind and that's keeping me about 210 but I didn't know about the water. I'll dump it and see if that helps.

    I have a rack of ribs in the smoker and it will not come up to temp. I even have the temp set at 270 and my maverick thermometer is only reading a max of 212 then it will drop back below 200.

    Someone along the way misinterpreted what I said. I didn't mean that everyone foiled and that's the only way to do it. I just mean that when you hit the stall the fastest way to get past it is to foil.
