    do you always smoke?

    ok, heres the deal. Me my son love smoked, wifey daughter not so much. so does anybody use their smoker with less wood? or no wood, just let the heat do its job? or is there a way to have less smokey flavors?

    pre seasoning?

    is it necessary to " pre season" my new  MES ?  the book says to heat to 275 for 3 hrs and at last 45 min add some wood.  why? Im new with this gizmo. didnt do that with the brinkman, I did however take all racks / cooking grills and washed them, they fely a little oily . thanks yall. im hungry.

    im a telco repairman/splicer/re-engineer/lineman at att if its broke i fix it, needing replaced i replace and splice it been there 18 years. also im a team member of our disaster recovery spec ops/ hazmat operations.

    ok im new here, doing a lot of reading, im on disability,  so i come to the understanding, that if it fits in a bacon woven blanket its called a "fatty". can you make anything a fatty?  my son and i love seafood so is it possible to do that? scallops,crab, shrimp, alligator, ect?

     after looking at my new smoker for 8 years, i finally tried it this past summer, now im hooked along with my neighbor. now a soon to be proud owner of a   Masterbuilt 30" 4 Rack Electric Smoker , gift from mommy, I figured what better way to share and discuss cooking things, beef pork poultry...
