Looking for the best smoker I can get - any suggestions?

So after a few years with my pellet smoker (which I love), I wanted to upgrade to a stick burner for a few reasons: 1.) Pellet smokers only come but so big and I want a lot more cooking area 2.) I just haven't been able to get the smoke flavor I want out of Pellet Smokers and after all the...

Rubbery Chicken skin, just a pellet issue?

So I've read people mention rubbery chicken skin before but I was wondering if this is just an issue with pellet smokers due to the fan/convection functionality or if it happens with traditional stick burners as well? After my long relationship with pellets smokers I think it's time to upgrade...

Yet another brisket post - Rub Time and cook temp question...?

Yeah I'm thinking that letting the rub sit on might not do much, other than drying it out... If it was marinade that would be a different story. I see in your sig you have the iGrill. How do you like that as appose to the maverick?

    Temperature accuracy?

Thanks for the advice everyone, the lamb came out fine; I just had to watch it like a hawk. Sometime this week I'm going to do the boiling water test to see which is most accurate. BTW which temp gauge do you guys use or recommend?

    Temperature accuracy?

So I'm currently smoking a leg and lamb and this is my first time using the Maverick Redi Chek 732 remote thermometer. I've noticed that the temp displayed on my RecTec digital read out and the maverick is vastly different... The Maverick is reporting only 244 and the RecTec is reporting 279...

    Let the smoking begin!

Ok so I only been smoking a few short months but I'm totally hooked and hungry to learn more. See what I did there? :) I started off with a Traeger pellet smoker which at the time since I was new was amazing for me. After a short time however 2 things I noticed, temperature control was pretty...
