Back in the game, first smoke of the year!

Fired up the smoker today, got my first ever attempt at a fatty on along with some abt's and bacon wrapped, mozzarella stuffed onion rings! A few pictures to tide you over: It's all cooking as we speak, fingers crossed! EDIT: It turned out pretty well:

First smoke of the year, first attempt at a Fatty.

Broke the smoker out today and thought I'd try a Fatty for the first time. I used 1/2lb of minced beef and 1/2lb of Lincolnshire sausage meat, seasoned with spog and Worcestershire sauce, sprinkled with Heavy Artillery. The filling is sautéed onions, mushrooms, red peppers and garlic, with...

    Brisket with Q-view

So, after much instruction from Wade and Danny over the SMF weekend, I tried a point end of brisket today. Well, I never want to eat anything else again!!! Cooked to a temp of 212f until it was probe soft, foiling after about 3 hrs with some pineapple juice, it was perfect, so moist and...

Back to basics: smoked chicken, with Q-view

Thought I'd revisit my first ever smoke today; smoked chicken. I've learned a lot from this forum in the past few years so it turned out much better! Chicken rubbed and ready to go on. After about 3hrs at 275f. Done. Pulled. Corn muffins as a side. Served up with some Alabama style...

    Smoking cheese. First attempt.

Got a cold smoke generator for Christmas so I thought I'd start out with something simple. Got some cheese smoked (along with some gin as an experiment). It's all vac-packed up now and in the fridge mellowing. I'm thinking a month? If I can wait that long.

    Pit beans

Thought I'd try some pit beans today as I was working in the garden and had some leftover pulled pork. They turned out pretty well, although I'm afraid to say I used tinned mixed beans and a tin of Heinz baked beans (sorry Danny) Sautéed off some smoked streaky in a dry pan to render the fat...

Smoked turkey legs on the Weber

So, ever since we went to Florida my better half has been going on about the smoked turkey legs you get in the parks. What better reason to fire up the Q? I started by brining them in a simple brine of salt, sugar, onion and garlic. I detached the skin from the main meat of the drumstick and...

Putting my new skills into practice.

So, I learnt so much about temperature control, amongst other things, at this years meet (huge thanks to everyone who helped me, which was probably everyone at some point) I had to give it a go on the weber today. Planked some salmon for me and the Mrs for dinner accompanied by a few ABT's just...

I broke in the Weber yesterday.

So I broke in my weber yesterday with mixed success. I tried using the snake method but found that it didn't really work too well for some reason. I don't know what I did wrong but maybe someone can tell me. Anyway, once I added more coal (effectively making it a minion method) it came up to...

    Weber kettle help

So my wife has been nagging at me to get a new BBQ, (for some reason she thinks half a beer barrel on the floor is "ugly") I figure I might as well go with a Weber kettle so I can smoke on it too. The question is, which one? I figure the biggest they do is a good start, so it'll be the 57cm one...

3rd time lucky? Adventures in pulled pork.

So, having got back off holiday, I couldn't wait to break the smoker out. I Got some Heat Beads the other day and I was itching to try them as I've heard good things, what can I say? First of all, Holy crap these things burn well and hot. I chucked 3/4 of a chimney into my cheapo bullet and the...

Where do you get your supplies from?

I've been smoking with wood chips up until now but I want to try wood chunks as people seem to prefer using them. (Although I have just picked up 2 more bags of chips that I spotted cheap in TK Maxx). With that in mind where do you get your smoking supplies? Wood, charcoal e.t.c. I know there...

I'm back, and the smoker is out!

I started here last year smoked a few things, but as the weather got worse and work got busier I didn't have the time to smoke so I disappeared and my smoker went to my old man for some mods. It's back now and as it's pretty alright weather I've got a shoulder of pork on to smoke. I could only...

Modified smoker round 2. Ribs with Q-View

So I've added some more ventilation to my charcoal pan as per suggestions in the other thread I've also filled the drip pan with sand and covered with foil. Figured I might aswell take the opportunity to try out my first rib rub recipe while I'm at it so got me a few slabs to throw on. I'm...

My first smoke does not appear to be going well

So, I've got my first smoke on on this dreary lincolnshire day. It does not however appear to be going well. I'm having massive issues keeping a decent temperature in the smoker. As soon as the charcoal gets to the stage I can cook on it I get maybe 1/2 hour at a decent heat and then the temp...

Hi there guys. I've just joined this site and the UK group so I thought I'd introduce myself. My name is Paul and I'm from Lincoln. I've just bought a cheap as chips smoker as it's something I've always wanted to get into but have never had the means to try. It's good to see a group here for...

Can I hot smoke with sawdust?

Is it possible or does it burn too fast? I'm using a vertical smoker and I thought maybe if I wrapped the sawdust in tinfoil or used a gastro tray on top of the coals that might work? Or am I better of just buying wood chips from somewhere?

    What's best to start with?

As I'm new to smoking meats I was wondering how best to start out. I'm looking for something pretty simple that will let me learn the capabilities of my very cheap and cheerful smoker Any advice you can give me would be great.
