    Looks great. I've been wanting to do my own cold cuts, honey maple ham and smoked turkey. Is it neccessary to brine the Turkey before smoking? I've heard people mention you dont need to for it to be juicy, some people say partially thawed while smoking will still be juicy.

    Thank you for all your responses, I appreciate it. My concern wasn't about ingesting nitrites/nitrates from curing the meat, it was more about cutting out the week long process it takes to cure. I will continue to try and hone my bacon techniques, plus I might have to try smoking pork belly...
