    The first attempt at curing a shoulder. I used wet cure 40reading on the Brinometer. Added juniper, pepper, garlic , bay, sugar, and #1 cure. Left in brine for 7 days then hung in cool room for a day. Smoked at 220F for 6 hours. I'd love to post a picture of the final results but this thread...

    I wet cure pork bellies for bacon. I am using a brink meter to set the salt content in the brine. Normally I use between 40 and 60 on the reading. Alice from cure1 and other spices.     Thanks for this. I feel better now knowing thus is a common coco ranch and not only something that has happened to my. So I will as a course of action wash and brush the offending surface and refrigerate. Thanks for the help I've received here. It's great to be on thus site. :yahoo:
