    The past couple of years Ive been removing the membrane.   Don't know if I noticed much of a difference.

    New from Florida

    A quick intro.  New to smoking and new owner of 30 inch MES.   Some experience with low and slow on charcoal grill with offset fire box.  Brand new to smokers.   Excited about this.  Started with wings that came out great.   Now progressing to spare ribs today.
