    Oh, one thing on how I check temp. What I do is register the temp on the smoker using the stock smoker therm. I unscrew it (it's a small hole) and insert the oven therm as it has a long metal probe on it to get the real temperature. It's always a consistent difference. I do not open the smoker...

I always believed it was the temperature too so I took the therm off the smoker and put in an oven thermometer and measure the temp at each level of the smoker along with the different areas of the smoker.
