I don't think theres any discrimination about good ribs, its all in the brand you get. I've gotten horrible meatless ribs, and Ive gotten nice meaty ribs. Just depends where you buy them, and what brand. -

Wow I have to spray mine every hour or else they turn out black from being dried out. And that's with a MES 30. -

Newb question
Sorry for getting back so slow guys, been in the fields helping to harvest. Wow you guys are both dead on. Definitely not getting light blue smoke. Getting the thick white smoke. Using a mix of pecan and hickory, mainly pecan. Yes I am using the stock MES smoke tray.- sketch

Newb question
Alright, apparently I'm a lot more of a newb than Id like to admit or think. But I'm having some problems smoking on my MES 30. I know its all on me, my smoker is working just fine, but I keep over smoking everything. So can someone please tell me the proper way to work these dang electric...- sketch

Ready for Winter???
Yeah definitely need to be prepared for this winter. Looking to have a lot of snow with the way its been raining. Doesn't 1 inch of rain equate to 8 inches of snow? If it does its gonna be a rough one.- sketch

I think I'd start off just hoping to get 1 booking a weekend, and see how that treats ya. Then if you want more and your able to get the business consider going to 2 events a weekend.- sketch

Yoder Smokers
Well I like what I see so far... I guess my question is, is this a competition quality smoker? I mean with the competition cart that is. Or would it be necessary to go to a bigger Yoder smoker, or a smoking trailer? Thanks guys- sketch

Non smoked ribs
Awesome thanks guys, I will definitely be trying woods. I wont be worrying about the smoke ring. And yes I do foil my ribs about 3 hours into it. Maybe I'll have to move up to a different smoker... I'm wanting to try a smoking competition. Thanks guys. -
