Wood Chunks -- where do you put them??

Thanks Big Grill! I use a charcoal basket too. You're right a little white smoke probably is not a game changer...

Wood Chunks -- where do you put them??

Thanks Jimpam!! I should have mentioned that I use the CharGriller Pro. Yes, your comment makes sense. I find that when I put the chunks on hot coal, I get lots of white smoke. I suspect I am using too much wood. Then I saw a video in which the wood chunks were placed on a pan and on hot...

Wood Chunks -- where do you put them??

Hi All, Hope all is well :) When smoking, where do you put your wood chunks? - Directly on hot coal? - Directly on unlit coal? - Wrapped in foil with holes poked in it and placed directly on hot coal? - In a pan placed directly on hot coal? - Other places I am just curious.

    New CharGriller Super Pro W/Mods

Personally, the biggest benefit from the charcoal basket (for me thus far) is holding the charcoal together. I tried the minion method and did not notice much of a difference in fuel usage. The lit coals lit the un-lit coals rather quickly. Perhaps I used too much lit coals?

    New to smoking...

Thanks.  I've never had a problem with the warming rack interfering with pork butt.  Then again I have not smoked any larger than 5 lbs. Does the paint on your firebox peel?  Looks pristine from the picture on your profile...

    New CharGriller Super Pro W/Mods

How did you get the duct to fit over the vent?  I tried a 3" and 4" semi-rigid duct which were, respectively, too small and too big.  I ended up using aluminum flashing.  Had to cut out pieces of the warming rack so the flashing would go through it... Also made a charcoal basket and it has...

Char-Griller Smokin Pro with firebox- Mods

mine did on the SFB, even after applying Rustoleum rated for 1200 degrees.  Apparently the bubbling and peeling is normal

    New to smoking...

I picked up the CharGriller 2121 with SFB a few months ago.  Done a few mods (extended the smokestack, made a charcoal basket with expanded metal, dual thermometers).  Thus far, I've smoked a few Boston butts and they came out fantastic!! Had to "modify" the warming rack so the vertical...

Char Griller Pro Smoke Stack Extension (using aluminum flashing and warmer rack)

Great forum!! Thanks to all the great hints, I have done most of the "standard" mods--including building a charcoal basket.  I tried to extend the vent with a semi-rigid aluminum duct, but found that 3" was just too small and 4" was just too big.  I could not find one that was just right (the...
