I recently had to replace the biscuit burner for my Bradley digital smoker. And now that it has been replaced with a brand new part the burner will only burn about 1/4 of the biscuit before it dumps it in the water. Is there anything I can do to stop this and get it to burn the whole biscuit so...
Question for everyone, I have never heard anyone talk about using plum, pear, or peach wood for smoking. Will it taste good, or will it give it a funky flavor?? I only ask because I have access to a lot of this kind of wood.

Ok so I was helping my parents clean their garage, and found my dad's old Brinkmann gourmet electric smoker. This thing is about 15 years old. Anyone know much about this brand? Is it a good one?
Question, I have a kosher beef hot dog recipe that calls for 1tsp of cure #1, so I went and got the cure. On the packet of cure it tells me to use 1/3 of a tsp. per pound. Which do I follow the recipe or the packet of cure? Oh yeah the recipe calls for 5 pounds beef. If that helps.
