    I've even gone as high as 350* and couldn't tell a difference (at all) for some cuts "low & slow " is the way to go, with Pork Butts I don't think so Great ;Q

    They were about 6 pounds each(after cutting in half) , I never foil butts (or ribs)  as I recall they took about 10-11 hours @ approx 245*

    Any particular reason you DON'T homebrew?

    Not hard at all search "swamp coolers" for home brewing (you may need to add some ice bottles for the first three days to keep temps in range but worth it IMO)

    I'm drinking a very good Porter I home-brewed -much better than any commercial I have sampled (FWIW)  My wife is not much of a beer drinker and doesn't care for dark beers but agrees this IS good stuff so that is a plus in my book!
