Yea I just went ahead and tried it set it at 185 for about two hours or so then down to 165 because it was at 145it and thought no way so turned it down and just let it smoke for a while turned out pretty good

Bacon worked out pretty good thought might have been a little salty but not bad were really dry reheated next day though, and yea I cubed mine pretty good made sure there was no pellets
First attempt at making any type of sausage made some brats used half goose and half a cheep bacon and the backwoods bratwurts season and then of course added in cheddar cheese needed more cheese but worked out amazing super happy

Just made this took mine to about 170F like it a little more cooked inside this is amazing and only second time used the smoker super happy with this, thank you Shelton for the recipe it will be getting made a lot and more then likely used for lunch meat
