Thanks for the good ideas Sigmo.. I will try them all. Now that you mention all that it makes perfect sense. Just like a grate in a fireplace lets air in under the logs. And great idea on the microwave. Will update on the next smoke and see how it goes.
I recently completed my mail box mod on the masterbuilt. .. My problem was that I couldn't keep the A-Maz-N pellets to stay smoking. I followed the directions with the pellets.
Fill tray to the top but not overflowing
Light with propane torch for 45 seconds
let the flame burn for 10...
Finally got my smoker out after finishing the mail box mod.
Sourced some local brisket from a family farm shop close by.
Rubbed my meat. :)
Fired up the pellets
And got to it. 10 hours or so later......
Very nice bark. Used a spicy rub: Cayene, chili powder, salt, pepper...
Thanks for the advice.. I will try the vacuum seal and reheat method and see how it goes.. I will get some pics posted, but won't be until next weekend when we hit the camp.
Going on a weekend camp, but want to pre-smoke a brisket before the weekend and then serve it on Saturday evening.. Any thoughts on reheating the tasty morsel back to perfection.. I will only have open fire with cast iron cookware to use.. either a dutch oven, griddle, or a lg. skillet will be...

I take it the disposable pan is now the drip pan and water/moisture pan all in one. What type of adjustable vents did you use in the bottom and top. I can find the damper type used on charcoal grills. How big of a hole did you drill for the vents?
