    Trying my first brisket this weekend. This could be a dumb question but do you just ask the butcher for some butcher paper? Or is that something I should order off amazon?

    I have a question regarding rest time.  I've seen people wrap in a towel and rest 1-2 hours.  Would it be a problem to rest 3-4 hours if you hapepen to finish much earlier than anticipated? Thanks!

    Kind of on a related note.... If I am smoking the pork shoulder all the way to the 195-205 range without wrapping, should I wrap before I place in a cooler to rest? Thanks in advance!:grilling_smilie:

    Thanks to everyone. Updated plan: Pork butt in the smoker at 250 from 7 am-noon.  Finish the pork butt off in the oven as others have suggested and then throw the ribs in the smoker for the 2-2-1.  Easy crowd coming over who can roll with the punches so I will say eating around 5 or sometime...
