    4.5lb brisket....could be better

Picked up a small brisket and smoked over the weekend while I was changing out my pool pump motor bearings...PITA BTW. Little 4.5 pounder came out ok, but not great. Salt, pepper, and a little cayenne. 225 for about 6 hrs, wrapped in butcher paper for the rest...about 5 more hours. Had a water...

    Downdraft hood for Traeger

Does anyone have any experience using one of these downdraft hoods?  Seems like a great idea to prevent backflow on windy days, but I'm a little concerned with airflow....and that it's $80! http://shop.pelletgrillaccessories.com/product.sc?productId=207&categoryId=8

Just got a Traeger - any words of wisdom?

For my Lil Tex, I installed a nomex gasket for the door and placed 4 or 5 fire bricks on the bottom to help maintain temps.  Seems to even things out.  Wind seems to be my biggest enemy now.   If you have amazon prime with free 2 day shipping, the best deal around seems to be the CookinPellets...

Traeger Lil Tex Elite... Craigslist find. Is this a good deal? NEED QUICK ADVICE

I know this post is over a week old.....   I've had a Lil Tex Elite for almost two years and love it.  When I bought mine, I was told by the sales rep there was a period of time Traegers were built in China and they had issues with quality control.  My neighbor was a victim of one of these...

    CookinPellets vs. Lumberjack?

I've been using cookinpellets perfect mix for the past few months.  Haven't had any issues burning them in my Traeger Lil Tex.  Good flavor and didn't notice much difference leftover ash than Traeger's pellets.  Without buying huge quantities, the best deal I've found is on Amazon.  Since I...

First attempt at a boston butt

Even after handing a pound over the fence to my neighbor, we still ended up with three quart size freezer bags, roughly three pounds. Plenty leftover for a few new creations!

First attempt at a boston butt

Well, here are a few shots of my first attempt at a boston butt. Being 9.5 lbs, I thought it could take up to 18 hrs, so I started it last night around midnight at 225 F. I watched it close for the first few hours and sprayed with apple juice every hour. Placed in pan at 3 hrs in. The time...
