Great looking ribs my friend, when I lived in Carson City, we had great ribs out there and then they transferred me to Alabama and all you get here is bones @ 4.00 @ #. I got a choice rib roast in Dec and had the bones cut with some meat on them and they were great.

Welcome aboard, I had a Brinkman charcoal, and a gas burner also many years ago and I found that by wraping the wood chunks in foil and punch a few holes in the top of the foil I would get great smoke and no flare up's. I had great smokes this way.

Thanks to Bearcarver, I made my masterpiece today. Used my MES 30 and Todd's pitmaster's choice dust and Followed Bear's recipe and directions. Awesome, tender and very flavorful. The best there is.
