    I'm smokin' shoulder and beans. I've got a wood stove to prep my embers. Seems to be working. Much finer smoke coming out of wilson. I'll be at it till well after ten. Thanks again folks for the input on fuel.

    I'm also going to try shorten the exposure to the smoke by wrapping the meat in foil after initial smoking.

    I built a barrel type reverse flow. I plan to build a charcoal hopper for the fire box. Going to try the charcoal.

    I'm new to the whole world of smoking meat. My first attempts were all with just wood as fuel. Too much smoke!!! Do I need to "pre-burn) the wood and cook with the embers or should I go to charcoal? Can I use briquets?
