Wet aged these chuckies (8lbs) for 3 weeks, smoking them tomorrow. Planning to smoke at 250 till they hit 165 then foil pan lidded to 195. Cube and finish in foil pan till sticky and delicious
I am looking at replacing both of my MES30's and picking up one of the 20072918 MES40's. is anyone familiar with this model number? I searched the forum but got 0 results. My 30's are the 20070910 gen 1 which makes me thing this is also a Gen 1 40 (all black no window). Any help appreciated.

Todays ribs were my best ever. Standard 3-2-1 but I went on a recommendation to add jalapeno jelly to them just before foiling. The pitmasters blend combined with my rub and the jelly really tasted awesome! I ran short of jelly for all slabs but it sure was good on the first one!!!
Hadn't seen this one reviewed, picked up on ebay for 27 bucks. I have only used it twice so far, but as you can see from the pic it appears to be within a few degrees of the ET732. Can't beat it as a backup for the price.
3-2-1 pork baby backs. I know my blower setup may not really be necessary, but it works like a champ. 1 row in the AMNPS lasted over 5 hours. Sauced, grilled off and ready to go!
