    Pork butt for pulled pork - tied or untied?

    Just bought two boneless pork butt roasts (around 4lb each).  They came tied up.   Should I leave them tied or untie them first before smoking?

    Received wood chunks today. Took about a week from order (shipped to Ontario). Haven't tried the wood yet, but sizes look good. Probably approx 35 pieces per box.

    Thanks LegacyofBob... Yes, I am planning some of the other mods suggested on the forums.  I am definitely going to pick up the recommended dual probe Maverick thermometer for more accurate temps. The sand suggestion is for adding thermal mass, but you have a point that it may be less necessary...
