It's been a while since I have posted, what with moving and getting settled, etc. But I'm back to smoking and posting. Today is deer sausage day! Sorry, I didn't get pics of the making, put I remembered to get pics of the smoking!

Today was all about sausage making. Here we have 41 pounds of lean and 8 pounds of fat ready to be processed:

I finally decided to try and smoke some fish today. I chose tilapia ('cause that's what we had on hand) and I must say, the results were fantastic. So, without further preamble, here is the process and the pics!
