Almost hesitate asking, because it sounds dumb, but I just finished my first venison sausage smoke (15 lbs) using one of those popular sausage kits from Gander Mtn, and I used the cure from the kit along with their seasoning packet. It's currently blooming on the counter right now then will go...
My #2 won't get above 225 degrees. This is the first time it's happened. I have two pork shoulders in there right now, one large, the other medium on the same rack in the middle of the smoker. I have the AMNPS in the bottom producing decent smoke. The hole at the bottom is clear. I have a small...
The pulled pork was fantastic. Ended up keeping it wrapped in the towels and cooler a little longer than expected but it didn't impact the flavor at all and if anything made it even juicier.
Got my very 1st smoke in the #2 as we speak. Doing a 6.5lb pulled pork over hickory. I'm using two large pieces of hickory that was sent with the #2. Using Meowey's Basic Pulled Pork technique that I found on this forum, a rub I found in the book "Smoke and Spice" and will add some SoFlaQuers...
Received my #2 today with a nice personal note from Steve. Can't believe how fast it was shipped and the packaging was 1st class. Screwed the wheels on and I'm good to go. A few more honey-dos and I'll be rockin' and smokin' in no time. Like others have said, it's built like a tank. Can't wait...
Sarge,
I found this thread researching the PID and whether or not this should be something to consider to go along with my yet to purchase SI #2. Like Smoke Happens, I'll be doing some sausage (venison types) and will want a pretty accurate temp setting. But after reading about some the DIY...
I had to look up what qmats were? Are you referring to those QMATZ non-stick BBQ Mats made by TJohnson? Think the -732 will definitely be in the shopping cart. Just don't know about the cord hanger. Could use the cover I guess
Suya - Thanks, I'm thinking since mine will be stored in the garage that I can do without the cover. Also, what's the deal about the cord hanger I read so much about?
When I was looking to buy my first smoker last summer (as a belated 50th birthday present from my wife) there wasn't much written on the SI smokers and so I hesitated buying one...almost pulled the trigger on the MES, but thankfully I held off. I'm thankful I waited now seeing how everyone is...
Cohiba - I'm kinda in the same boat as you...yet to get a smoker but when I do it will be a #1 or #2. I'll probably opt for the #2 to give me a little more capacity but yet not too big. I'm also a modest smoker with mostly just my wife and I and an occasional relative or two. I'm sure I could...
Nice idea with the dowels and thanks to the others for the recommendations. Still not sure which way to go. My thoughts on the MES, which may be unfounded, is that the quality control, particularly the weak hinges on the doors which I've read some guys are modifying to make stronger and some of...
Hey Stormer. Small world. Been to Cook many times. I grew up in Hoyt Lakes and Virginia. My dad currently lives on Vermilion (Tower end) not too far from Bay View. I like the Yoders but am leaning towards something smaller and more convenient like one of the popular e-models. Cheers!
Hello all. I'm brand new to the SMFs and need a little advice. My primary interest is in smoked sausage. Those of you with electric smokers, which one do you recommend? I've read good things about the MES 30/40 with an AMNPS and I've also read great reviews on the Smokin-It Models. Which one...
