Where in NC are you hailing from?

I grew up in Erwin (Denim Capitol of the World...left at traffic light). Have lived in Fayetteville and Charlotte. In Virginia now, but still a Tar Heel at heart. Every time I'm down that way, I buy plenty of Carlie C's IGA sausage links to bring back with me. YUM!!

    Scarbelly Wings (Buffalo Style)

I'm so glad I found this thread. Although I prefer Buffalo style sauce, I have extra teriyaki marinade from a batch of jerky and will use that instead. I really doubt I'll be using my Fry Daddy after seeing how those came out!

    Checking in from Charlotte, NC

No problem, hope you enjoy it. Tell us how later how it went. I used to live in Charlotte and I miss it all...except for the traffic.

What's the best beverage to drink when smoking what meat?

Depends on what I'm smoking. If I'm smoking pork or beef I have beer. If I'm smoking chicken, I'll have beer. However, if it's winter time, I'll have beer.

    Hello Carnivores

Glad to hear that. I'm really looking forward to using my MES 30 for jerky instead of my dehydrator. I have never had deer jerky but if I get any deer this year, I will try it. Thanks for the welcome!

    Late 1800's Smoke House

Very nice...and a little jealous. My grandfather used to have a wooden smokehouse as well. As a kid I would go in there just to take in the smell. If you want more information, you might try searching for Foxfire books. My dad had a set and I think I remember reading about smokehouses, how to...

Store - bought Jerky mix / cures

If you want a mix you don't have to think about, I use the Nesco brand jerky seasoning. My local Walmart carries it but you'll have to look in the small appliances aisle where they also sell dehydrators. 1 packet of cure and 1 packet of seasoning which I use with 1 lb. of lean ground beef or...

How to remove the membrane off the back of ribs

I will try that with warm water the next time I'm preparing my ribs. Glad I saw that little piece of extra advice.

    Hello Carnivores

Hello fellow meat-eaters,  My name is Bryan and I'm originally from NC. Currently, I'm living in Virginia near Blacksburg. I found this site by searching for a jerky marinade for a London broil. SMF was second from the top on Google. As I was in Food Lion this morning, the meat dept. was...
