First a little back story. I found a local guy who finishes knives out of blanks and ordered a Santoku blade off him which I really liked, I finished off the smoking season using it last year and decided I wanted something of a hybrid; called him up and we came up with a design. NKC MO State Championship BBQ 14Mar NOW W/ QVIEW MY ENTRIES
Could have gone better I made a fatal mistake using wood that was I wasn't sure was dry yet or not and well... it wasn't. There was an off taste that especially showed in the brisket and pulled pork netting me 2nd to last in the brisket and 50th (12th from last) in the pulled. I did however...- shmitty

1st place pulled pork! 3rd overall
Was Sunday so I just slept til noon, my sleep schedule is usually not very consistent with work so I'm used to it. My mother is the woman with me she was awesome towards the end probably the reason for 3rd overall those presentation points really rack up! I was hoping to give all that hickory...
