    Today I'm smoking two 9lb shoulder butts.  Got them on the smoker at 7am.  I'm going to smoke until 4pm.  Been looking forward to this all week.  Pictures to come.

    Smoked Brisket Chili

    It was definitely tasty.  Really could of used some more heat though.  Just wish I had a better chili choice than jalapenos and habaneros.  I didn't use habaneros because they just seem like all heat and no flavor to me.

    How do you feel about High Heat for butts?  I'm smoking 2 shoulders right now for a friend of mine.  They have been on the smoker since 4:30am.  I'm using a firebox style smoker.  I usually like to smoke low and slow, but I had a temperature drop during my last nap.  (I thought I would be bold...

    Hey everyone.  I just started smoking this past summer.  Right, now I've been up since 4 off and on taking short naps checking on two pork shoulders.  My absolute favorite meat to smoke and eat is brisket.
