    After separating the point from the flat, you said you wrapped both. Did you continue to cook them both? To what temp, each if so, are was this just to hold them? Pretty new to briskets. Thanks

    The minimum temperature, he is referencing is Internal Temp. Usally measured at the thickest part of the thigh Your cooking temp of your smoker will determine how long the bird takes to reach that I/T.
