    Spatchcock 22 lb turkey on UDS?

    Yes...those temps (220 - 240) is too low for a big turkey.  It will stay in the danger zone for too long at this low temp.  I've spatchcocked my 22 lb turkey and will smoke at 325 till i get the correct temp with a internal probe thermometer.

    Thanks so much for the help...I have 2 probe thermometers, so that will help me.  I'm smoking this on my UDS so running temps at 300-325 should be easy.  Thanks again and have a Happy Thanksgiving.

    Spatchcock 22 lb turkey on UDS?

    I have a 22 lb turkey that I want to smoke on my UDS, however realize that I will have to spatchcock it due to its size.  At what temps and for how long will I need to smoke it?  Any help is greatly appreciated.

    Weber top for UDS question!

    Pork Butt on UDS at 225 for 17 hours and still reading internal temp of 175!

    Thanks to everyone for the help.  I pulled this pork butt at 18 hours with the internal temp reading 180.  I let it rest for another hour.  The bone slid out and it appeared cooked to me.  It pulled easily and tasted great.  I will be checking my thermostat that I got from Walmart.  I've done...

    My New Team UDS's

    Those are great looking.  You will love them.  I finished my first UDS a few weeks back and have already smoked on it 6 times.  I'm gonna start a second one and do an Italian Flag theme.  Be patient as it takes a little time to figure out the temps and your drum.  Best looking UDS I've seen yet.
