    MES 30" Electric Smoker

    I just got this unit and love it!  However, I was curious as to it's effectiveness if you put a turkey, brisket, etc. in an aluminum pan to smoke.  I've read a few recipes that always say to use one, particularly the Myron Mixon recipe book. Does this hinder the smoking process in this unit?
