    Hi gang, Memorial day presented me with a great excuse to do some Q.  Baby Backs were the featured item.  I trimmed, pulled the silver, rinsed, vinegar bath, rinsed, and then applied olive oil.  I let them sit for 20 Min's.  Then I applied the rub.  It took about 40 Min's for the 18.5" WSM to...

    Pork Tenderloin.

    Thanks for the kind words guys.  This was a tenderloin; 1 1/4 lbs.  The meat thermometer said 143* F when it came off of the grill.  I always let my meat rest.  Until now I've always over cooked it: 160*F.  This tenderloin was very juicy, and the flavor was great.  What a difference.
