Ok so my smoker is going with a rack of ribs. I have a coffee rub that I let set overnight. I was having a difficult time getting my square virtical Brinkmann smoker up to 225. I thought adding boiling water to the water dish would help get it up....that didn;t seem to help all that well. ...
Yet another addicting hobby and another forum. I've been home brewing and thought why not add to an already long day and start smoking meat. Nothing beats great BBQ so next week while a brew up another beer I'll be smoking some baby backs.....should be fun!
Great to see brewers here as well. I'll be doing my first smoke next week along with the annual Watermelon Wheat. Cayote, do you like that smoker? I'm thinking of getting that one for my father-in-law. He's currently using the cheap webber bullet.

I am starting to research the how-to's of meat smoking and everything seems to be a bit scattered. Can someone point me to thread/link of beginer info for smoking. I will be getting a a brinkmann smoke-and-grill. I will probably do ribs first. So any tips for starting up would be great! thanks.
