A Goodbye to a true Buddy!

Our heart goes out to you and yours.  I know you are feeling tremendous sadness and heartbreak, and especially for your son. Kids bounce back from these life events better than most of us.  Don't beat yourself up, he will long fondly remember all the good and fun times with Buddy. Piggy will...

Cinderella has met her Prince: Prime Brisket Q-View

Those briskets are inspirational!  Magical! Ya know, State College IS in the middle of the state.  I can see it now.... Beautiful fall Saturday, all the smokingmeatsforum PA members gathered outside Beaver Stadium putting on a tailgate the likes having never been seen before.  Penn State Ohio...

    RUB SNAFU!

A bit late on this topic, but here's how I do mine.  I have not had a problem with the brown sugar.  My rub has 1 part brown sugar, 8 parts other stuff including white sugar.  For containers, I re-use the big spice bottles from Sam's/Costco that the garlic powder, onion powder, ground cumin...

To retro-kit, or not, that is the question (MES 40)

Nah,  I'm using that nasty sticky oil.  This wasn't actually a plan to use this specific gathering for smoking- I did know there was bad stuff in that bar oil and not to use it in the smoker.  I had to get the tree out of the yard and figured it was a good time to 'practice'.  I just was curious...

To retro-kit, or not, that is the question (MES 40)

Not at all Todd- all things in balance and moderation. I figure I bought the amazn to go with the smoker, not the smoker to go with the amazn, sooo....the dang smoker should work as it was designed to, just as the amazn does! You might want to know your product was the hit of the neighborhood...

To retro-kit, or not, that is the question (MES 40)

So after another couple of less than satisfactory smokes, I threw in the towel and ordered the retro-kit.  Should be here next week.  Weekend smoke with amazn and the less than perfect chip tray.  Sure appreciate all the input and advice from everyone! May your weekend smokes exceed all...

Second smoke - Pork Rib Roast

Thanks again for the kind comments. Dang, Points !  Man, no more slacking from me! Nice timing on your reply Bear, just day before yesterday I asked the 'boss' what those eyes of round at Cosco would be good for.  Now here you go putting me on track. Love your how-to on this.   I do love dried...

To retro-kit, or not, that is the question (MES 40)

Chuck, That seems like a mod even I could handle without too much mayhem.  Thanks for the good idea.  Probably one the mfr. should consider even.   I do like the idea of the bigger tray too for using chunks - I have virtually an unlimited supply of red-oak (this is an awesome smoke on beef by...

Second smoke - Pork Rib Roast

Thanks for all the kind comments. Someday I hope to actually earn them with a quality end product. Bear- like your plan and will do that the next time. The other thing I learned about their process is they 'tumble' them in a big tub, like a 'washing machine sort of' it was told to me. Don't...

To retro-kit, or not, that is the question (MES 40)

Lots of input to work with here.  That's greatly appreciated. Redneck69: I believe the both the box heat thermometer and the meat probe to be pretty accurate.  I have used a candy/deep fry thermometer placed in the center of the center rack.  When the temp is set at 225 and the temp reading on...

To retro-kit, or not, that is the question (MES 40)

Should have mentioned, I do have an A-MAZE-N-SMOKER , but I might not always have dust for it, so I would really like the MES to perform correctly. If making charcoal is correct, okay.  If not, the re-fit.  One thing for sure, the A-MAZE-N-SMOKER doesn't leave charcoal behind... I probably also...

To retro-kit, or not, that is the question (MES 40)

I have read a great many threads on here regarding the retro-kit for my MES 40 (model 20070211). After three smokes, I can positively say this thing is not producing ash.  Two smokes at 225, one at 275. Here are photos of the chip tray after 11 hours.  The tray was in the smoker the entire...

Second smoke - Pork Rib Roast

My goal was to replicate the smoked pork chops I get from my favorite butcher shop (Plug- Rhodes Meat Market, Martinsburg, PA - they do their own!). Those chops are amazing.  I know they smoke the whole roast at the time, not individual chops.  I know because I've had to wait for them to come...
