It just went in the cooler. I pulled it off at 196. It smells great, I can't wait for it to finish resting. I'm getting ready to make some of SoFlaQuer's finishing sauce. I'll take some pictures before I pull it and post them. Thanks all for the encouragement!!!
Ok, I started the smoker around 9 this morning, and so far so good. The attached pictures are pre-smoke and then around 4 hours in. Internal temps right now are 159 and the smoke chambers been between 220-260 so far. I just had to add my first replensihment of coals, so hat's off to the minion...
