    UDS build

Hello all, So I have been throwing around the idea of building a barrel smoker. I've seen all the sites that sell the parts to help with the build. Question. I have a billows and signals temp controller. If I plan on using that to help.with my cooks. The way I see it is that I only need a inlet...

1st time using cedar planks with salmon

Had some Salmon in the fridge and figured to try it on some cedar planks and in direct cook them on the kettle. Wife bought some salmon seasoning while in Alaska and we wanted to give it a try. Turned out pretty good. Had some corn on cob and rice pilaf to go with it.

Been waiting for a week to do some cooking.

They both came out edible. LOL! Not exactly how I wanted. Fought my grill I was cooking the ribs one with temps all day. Once the butt was done on the kettle i transfer the rubs over onto it. It was getting late and it got to about IT 180. so I pulled them. Everyone seemed to like it. Maybe next...

    WEBER 26 — MOONSHINE BABY

Looks good to me. Question for ya. Could you have cooked the ribs on the lower charcoal rack and then say cook a pork butt on the top rack using the slow and sear or vice a versa? Seems to have alot of space next to the charcoal holder on the lower rack that can be utilized.

Weber Charcoal Grill For A Rookie?

I love my 18 inch 2007 model. Only used it for grilling hamburgers, chicken, fish etc. My wife bought me a 22 inch red limited edition weber kettle. It sat and didnt get used much because I though for a family of 4 its to big to cook some hamburgers. I also have a char griller which is about 18...

Been waiting for a week to do some cooking.

Butt is done and sat in a cooler for about an hour. Which was good it got done before the ribs. Threw the ribs on the weber and took them out of the foil after 2 hours. Temp was around 160 and still only about 163. Guess its a stall? Gonna try to push threw it but everyone is getting hungry...

Been waiting for a week to do some cooking.

Heres the butt at 5hrs in. Getting close to 160 IT. Heres the 1st batch of japolinos. The weber is chugging along between 240 and 250. Basically leaving it alone. The char griller not so much. LOL! Still have some ribs and another 30 japolinos go go on it. It will be fun. Just have to learn how...

Been waiting for a week to do some cooking.

Learning one thing with this char griller. You do not need all that much charcoal with this thing to run it hot! LOL. Have the side vent completely closed, but not the best seal. Temp keeps running away like crazy. Have pulled alot of briquettes out and am down to this many and looks like I need...

Been waiting for a week to do some cooking.

So I'm about 2 hours in on the kettle and butt and i keep running above 250 with bottom vent closed. So i also closed the top vent completly to get temps back under control. Also took 1 row off the top of my snake. Got temps down to about 220 and i opened top back 100% and cracked bottom one and...

Been waiting for a week to do some cooking.

Well my weekend is finally here after a long week. Got my grills set up for some smoking. 7 lb butt, 2 racks of baby backs and a double order of stuffed japolinos. The butt is going on my kettle and the ribs and jalapeños on the char griller. Going to try the 3 2 1 method with the ribs, first...

    Brining question

Turned out pretty decent. A little salty could be from brine or the rub. Honestly next time I think salt and pepper would be fine for me.
