Just started a 2lb fatty.a piece of deer kiebasa and a 3.50lb chuck roast about an hour ago. Hope all turns out well.Fatty is a 1/2&1/2 mix reg. and hot sausage stuffed with alot of cheese and the chuck I rubbed with Jeff's rub!!!!!!!!!!!!
Just wondering how to not add TOO MUCH smoke when all you do is use wood for heat source. Seems like when I have tried some food that someone has used all wood for the heat it has an overly smoke taste???????
Yesterday myself and Gramason attended the KCBS Certified Judges class in Salisbury Md. It was a great experience for us both. Nice class to taken even if you do not plan to judge or enter any comps.
First jerky I made. I marinated overnight after slicing with a slicer. I used the Reynolds handy vac and it worked nicely. Smoked about 3hrs at 150*.
