Just bought a Charbroil big easy and tested it out today with thermometer and it is way too hot, got it turned to its lowest and still 400F can get it down to 300 but need to have kid opened, any ideas how I can sort this? Cheers

Thanks for that, I'm just a bit overwhelmed at the moment with mods and how/where to get the equipment!! I've bought a dual probe and have managed to keep the smoker quite stable at 225 degrees without any mods, I just open the side door slightly
It just says Brinkman Gourmet charcoal smoker on it, no vents on top but there is a side door that could possibly be used to regulate heat? I've ordered a dual probe thermometer too
I've done no temperature control at all, just keep topping charcoal up, I've signed up for the 5 day course and will have a look at the thermometer you mentioned, looking forward to doing it properly!
I'm afraid I started with very little knowledge and have been putting a basic rub on the meat and hoping for the best, my smoker has a simple temperature gauge that basically reads "too cold" "ideal" and "too hot", I think I need to start again from scratch, think I may have come to the right place!
Hi thanks for reply! Yes I have just found the U.K. Group! I'm gutted I just missed that, would have been amazing, I brew my own beer and the good lady is fantastic at desserts so we might have fit in nicely 128521
