I had read that the 5x8 tray had been designed to fit beside the element on the MES30. I bought a MES30 and ordered the 5x8 tray. Masterbuilt has made a change to the element on the MES 30, and the tray no longer fits beside the element. I put it on the lowest rack to smoke a Pork Butt on rack...
I don't remember where I saw it, but I kept the picture. After looking at it again, he is using a cheaper grill, as it has four legs. I have a Smokey Joe and want to try this myself.

I got a vacuum sealer so I could portion out things I smoke in individual meals, then seal and freeze. I just had some ribs tonight that I cooked over a month ago. I did the same with a Pork Butt I smoked two weeks ago.
Rick, I got mine from Amazon warehouse deals for $135 shipped. Evidently someone had bought it and returned it unopened. Still had the factory tape and wrapping on everything.

Oohhh, those step by steps are going to come in handy, thanks Bearcarver. I'll be trying that Boston Butt soon. My baby backs were very good, glad to have the first smoke come out so well.
Just unboxed my new MES 30. it looks like they have changed the hardware in the bottom of the unit.. Not sure the AMNPS 5x8 tray I ordered is going to fit, the two bars I saw in pics of the previous model are not there in this one, and there is not quite 5" between the side wall and element...
