    Got a boneless pork butt about 4.5lbs.  let it sit wrapped up overnight with brown sugar salt and pepper.  before smoking rubbed in peprika, white pepper, garlic powder, little more salt and pepper, cumin and ginger, along with a tad of oregano and parsley.  smoked for about 3 hours uncovered...

    one more question to add.  I read and here about not over smoking the meat.  but if Im doing a long cook with just wood, how can I not over smoke it?
