Kept it simple on the grill today. We wanted salmon so I marinated one cubed up filet in olive oil, Italian seasoning and crushed red pepper. Added a bunch of lemon slices and sliced up a red onion. Skewered it all while a chimney of coals got going on the Weber kettle.

It happens all the time when I make bacon (albeit not fermented). It's a reaction to those crappy wire racks. Unpleasant looking but should not affect product. I've all but stopped using those wire racks for that very reason.

Thanks Jim! The traditional recipe actually calls for the fish to be fried in a little oil but this way doesn’t smell up the house and we really prefer it baked.
