    Shrimp fried rice

Was not planning on posting but since I saw 2 other stir fry threads... We prefer "house" fried rice with all proteins but was Lent. Top one is takeout style (yeah we like egg LOL). Oil, light soy, ginger, garlic, sesame, msg. Bottom is hibachi style. Butter, garlic, light soy, ginger...

    Corned beef and cabbage sausage

No, not mine but thought you guys would get a kick out of it.

Your meat thermometer is also great for candymaking

Cherry Divinity. First run but recipe is a keeper. OCD in me will tweak it. It's essentially a meringue (egg whites whipped to stiff peaks) with added hot sugar mixture (brought to soft ball stage 250F). My trusty instant read made it a breeze.

Speaking of leftovers, my favorite use for leftover brisket

Brisket quesadillas. No lie, I make brisket basically for these alone. Not perfected yet but gets better each time. This run was minced onion, jalapeno, and dill pickles like the Texas style brisket sandwich.

Ladies and gentlemen, for your viewing pleasure, I give you the bratwurst sundae!

Loose bratwurst, mashed potatoes, sauerkraut, cheddar cheese, sour cream and an olive on top. Not mine, but is the work of St. John United Church of Christ, Bucyrus, Ohio. Bucyrus Bratwurst Festival starts tomorrow. Thought you guys might enjoy seeing it.

So close to my holy grail ribs

As usual the Contest inspired me to run some (Kroger having SL cuts on sale for 4th didn't hurt either LOL). Pics etc were not in the cards however. Anyhow, my first ribs were from a chain called Damon's. Fell in love with them. Probably not KCBS level stuff but they just do it for me. Our...

    Jerk jerky

Inspired by the threads here I dove into pork jerky. If you have doubts, don't. I did. No more! @jcam222 and others are to blame, I forget. WOW. Good stuff. The asian theme is KILLER for this. I decided to try a different direction. Not perfected but thought you'd guys would enjoy...

    Moo goo

Ecstatic to post this. Had a few breakthroughs. First, no need for a wok to make this. Any large pan works. The veggies and protein gets blanched in boiling water... 2nd. The chicken stock is indeed what I have been missing. This is so close to my old favorite take out it's crazy. WAAAY...

    School me on Frito Pie

Heard it a few times on the TV show King of the Hill and always had me wondering what it's like. Wife picked up a bag of Fritos the other day and we destroyed it so it got me thinking again. We're big fans of chili/tex mex so seems natural the 2 combined would be good. Any thoughts...

    Advice for draining water heater

Never did it before. Hot water pressure is low and I guess that is the classic sign it needs done. No doubt there is TON of experience here within the collective group and will take any advice or pointers. Thanks in advance.

    "Wood fired" yardbird

Got some killer rub from @kruizer for the Christmas Exchange and been dying to try it out on some bird and weather finally permitted it. THANKS AGAIN Gregory! Turned out KILLER! The rub is called Seminole Swamp Seasoning and can be had from Amazon but here is the company link...

Jerky tips for more pro type results

Haven't run jerky in a long time but EOR was on sale and jumped back in. Batch is mostly done and while tasty I feel a little too tough. Using on Ronco type dehydrator, Owens mix with maple cure, par frozen meat with slicer at 5mm. I think I need to tenderize but admit that I've seen a lot...

Trial run on new propane broiler

I wanted one a long time and finally pulled the trigger when a deal came up. Ecstatic how it worked with it being so cold outside! Grilling is a no go here in Ohio this time of year. Very happy with the outcome but need more practice. Wife made the menu last minute so I had less time to...

    Water inside fridge

Started about a month ago. A small amount of water pools at bottom but not everyday. Finally getting annoyed by it and want to fix. Classic freezer over fridge. Freezer is loaded but not so much in fridge. Any ideas? Blocked drain? I do not see any drainage holes on the inside. Thanks in...

Thuringer rostbrat style burger with coarse grain mustard on pretzel bun

Was much warmer than expected so I decided to grill some brat burgers to test my thuringer style brat recipe. Approx 1Kg pork butt and a single grind through medium plate. Mix was based on Marianaski's with added NFDM and a little MSG...

    Quesadillas my way (grilled)

Minced onion and colby jack. Nuke 30s or so to get the tortillas to stick otherwise flipping on the grill will be "fun". Salsa is the recipe as provided by @tallbm in the "pintos thread". Killer, but I admit I tweaked it slightly but not much.

Halving point and flat or maybe another way

I realize most guys are purists but I am not. We prefer our smoked meats in chunks, like a large chop if you will. I have to at least separate the point in the flat anyway since it won't fit whole in my MES. I'd like to to break it down a little more to speed things up a bit. I think maybe...
