Searching for a low carb ham recipe

Do ya'll wrap it in foil and rest like a Boston butt?  I haven't seen that on a recipe but just wondering.

Searching for a low carb ham recipe

Thanks everybody!   For experimentation sake and simplicity I'm just gonna throw it in the smoker with some apple wood chips and see how it goes.  Hopefully it turns out good. I did call the meat processor that cured it. She said it's a salt and sugar concoction that she buys premixed and said...

Searching for a low carb ham recipe

As I understand, it's cured but not cooked and all the recipes I was finding were for precooked or too much sugar for us.

Searching for a low carb ham recipe

I have a cured ham from a pig that my dad raised and slaughtered. It was cured at the meat processor.  I eat a ketogenic diet so almost no carbs at all.  Of course a ham with maple syrup, brown sugar, and pineapple sounds delicious, but it's out of the question.  I've searched for a while today...

    Thermometer Discrepancy

I checked the red-chek thermometer this morning and found it to be pretty accurate.  33f-36f in ice water and 210f-211f boiling....... So I guess that answers that question.  I positioned the probes as close together as possible since I anticipated some variation and wanted to compare, they were...

    Thermometer Discrepancy

Thanks ya'll, I'll do the boil test after this smoke is done.  I do have my meat and the redi-chek on the same level as the MES internal probe.  I guess I'll split the difference and lean towards the red-chek for today.  I'll report back after I test it.

    Thermometer Discrepancy

I'm using a digital MES and a Redi-Chek thermometer(this is the thermometer that I've always used with my old wood smoker).  It's my first time using the MES, I bought it used, replaced the element, found a short in the wiring, and cleaned it up.  I'm finding a 30-40 temp discrepancy between the...

    troubleshooting Masterbuilt 20070910

Thanks Chef JimmyJ!   I actually got impatient and figured it out last night. After reading more last night I found where people had replaced the temp safety switch so I checked it and sure enough one of the wires had burned off.  I'll replace it but for now I've bypassed it and the smoker...

    troubleshooting Masterbuilt 20070910

I have a Masterbuilt that quit making heat. I called masterbuilt and they shipped out a new element.  This AM I installed the new element and still no heat at all.  I tried to check for voltage coming from the "hot" wires that supply the element and got no voltage.  the controller appears to be...

    New to the Forum

Thanks for having me! I previously smoked on a brinkman but recently aquired a masterbuilt electric smoker and am looking forward to not having to baby sit the thermometer and fire box.
