I would assume that a 12 - 15 pound bird would take about 2 - 3 hours at 325 - 350 deg F to hit that IT. Would that be correct?
Also, what is the best way to keep the bird at temp for transporting to someone else's house? My fear is that I would get their and it would have either dried out...
Thanks Lamar. I am not sure why mine were flaring up either, but having both side vents fully closed seemed to help diminish that.

I am sure someone has. It should be no different than converting an LP grill to NG. You need a different regulator, and then you need a larger nozzle sized burner. Some people simple drill out the holes on the burner after adding the correct regulator.
Be sure that you have other thermometers that you know work well to use as a set point to test your new thermometers against.

I personally went with this (Bayou Classic 0-30 PSI Adjustible Regulator/Hose Assembly) after reading several different people on here talking about the ability to make finite adjustments using the adjustable regulator, and leaving their smoker set to high. Price is still right at $30.
