    Thank you! So far it's cooking nice! I just hit 12 hours on an 11lb pork shoulder. I had no clue how little coal my smoker would consume to stay at 225! I'm used to a cheap brinkmam. So I loaded up to tray and got her going.. Right on into 400°! Oops. I've been keeping a log. On roughly 11-12...
