I know not to use Matchlight for smoking. However, my brother used my Weber to grill some steaks and used Matchlight. Do I have to do anything to my kettle before using it to smoke again? Thanks in advance.
Decided to smoke a pork butt this past weekend.
Rubbed with Jeff's rub.
Into the smoker at 225° for 6 hours. Smoked with my AMAZN smoker filled with applewood pellets.
After 6 hours into a pan with@Chef JimmyJ finishing sauce for 2 more hours.
Decided to make a pan of @Dutch baked beans...

Has anyone ever used like a sweet chilli sauce, instead of mustard, to help the rub stick to the meat? Thinking of trying with like an Asian style rub for pork butt.
Usually we grill our char siu (Chinese barbecue). Decided to try smoking a pork butt that had marinated for 2 days. 5lb chunk smoked at between 250-275 for 4 hours. Royal oak charcoal with pecan chunk and apple chips.
