    I noticed on the link that some guys move their ams up. Can I just put all my meat in a foil tray and smoke or will that reduce my smoke flavor? If that's ok then I can move my ams pellets up and not worry about the dripping putting out my pellets.

    I brine my chicken overnight, rubbed it and put it in the smoker at 7pm. It's been in there for 2.5 hours and my internal meat temp is 165. How much longer do I keep it in there? I've been smoking at 275 the entire time.

    Decided to brine my chicken with a simple recipe I found so Im going to leave it in there overnight and smoke tomorrow. I'm doing my bologna now. One question I have, Is the actual smoking time the same as the cooking time? Do I keep adding chips for the entire 3 hours if the smoke stops?
